Seafood and Feta Stew

INGREDIENTS
1/4 Colive oil
1 lbshrimp, peeled and deveined, or scallops, or fish cut into chunks
1sweet onion, chopped
2garlic cloves, minced
1/4 lbfeta cheese cut into small cubes
1 cantomatoes ---14 oz. can chopped, or fresh tomatoes
1/2 Cwhite wine
1/2 Tbsporegano
1/2 teasSalt and pepper or to taste
4 Tbspparsley, chopped fresh flat leaf


STEPS
1. Heat oil in a large saucepan. Add onion. Cook and stir over low heat until translucent, about 5 minutes.
2. Add garlic and cook 1 minute longer.
3. Raise heat and add the tomatoes with liquid, wine, oregano and salt. Bring to boil and cook over moderate heat, partially covered. Stir occasionally until thickened, about 30 minutes.
4. Add shrimp or other seafood and pepper and simmer covered until the shrimp are just done - about 2-3 minutes - or a bit longer for fish. (Add water if needed to just barely cover shrimp.)
5. Stir in feta cubes. Remove from heat and top with parsley. Serve in bowls or over rice or pasta.
