1. | Heat oil in a large saucepan. Add onion. Cook and stir over low heat until translucent, about 5 minutes. |
2. | Add garlic and cook 1 minute longer. |
3. | Raise heat and add the tomatoes with liquid, wine, oregano and salt. Bring to boil and cook over moderate heat, partially covered. Stir occasionally until thickened, about 30 minutes. |
4. | Add shrimp or other seafood and pepper and simmer covered until the shrimp are just done - about 2-3 minutes - or a bit longer for fish. (Add water if needed to just barely cover shrimp.) |
5. | Stir in feta cubes. Remove from heat and top with parsley. Serve in bowls or over rice or pasta. |
